Ingredients

QUESTIFIED GREEK SALAD PIZZA

  • 8oz cream cheese, room temperature
  • 2 cups cheddar cheese
  • 1 jalapeno, seeds removed
  • 2 egg, diced
  • 1⁄3 cup coconut flour
  • 2 bags Quest Nacho Cheese Tortilla Chips, crushed

Method

  1. In a mixing bowl, stir together the cream cheese, cheddar cheese and jalapeno.
  2. Spray a 1 1⁄2 inch cookie scoop with non-stick spray and use it to make 14 evenly sized balls of the mixture.
  3. Place the balls on a tray lined with parchment paper and chill while you prepare the other ingredients.
  4. Place the eggs into a bowl and whisk until smooth.
  5. Place the coconut flour into another bowl and the crushed chips into a third bowl.
  6. Working with 5 balls at a time, coat each one in coconut flour, then egg and finally cover with crushed chips.
  7. Place them into the tray of an air fryer and cook at 375F for 5 minutes and golden brown.
  8. Repeat until you have cooked all of the balls.
  9. Insert a toothpick and serve.
