Ingredients

CHOCOLATE SPRINKLED DOUGHNUT COFFEE CAKE

Cake:

Streusel:

  • 1⁄2 cup almond flour
  • 2 1⁄2 tbsp zero calorie sweetener
  • 1 tsp cinnamon
  • 2 tbsp butter, melted

Icing:

  • 2oz cream cheese, room temperature
  • 1 tbsp butter, room temperature
  • 2 tbsp powdered zero calorie sweetener
  • 1-2 tbsp almond milk
  • 3 tsp multi-colored sprinkles

Method

  1. Preheat the oven to 350 F and prepare an 8×8” pan with parchment paper.
  2. In a microwave safe bowl, add the chopped Quest bars and 1⁄4 cup of the almond milk.
  3. Microwave on high for 30 seconds. Stir until the bar has melted.
  4. You may need to pop it back into the microwave for an additional 10-15 seconds.
  5. There will be small clumps, that’s ok.
  6. Transfer the mixture to a large mixing bowl and add in the remaining milk, eggs and coconut oil. Whisk to combine.
  7. In another bowl, combine the almond flour, oat flour, cocoa powder, sweetener, baking soda, baking powder and salt.
  8. Add the dry mixture to the wet and stir until no dry spots remain.
