Ingredients

QUESTIFIED CANDY BITES SNACK CAKE

  • 1 cup almond flour
  • 2 tbsp gluten free baking flour (1:1)
  • 2 tbsp zero calorie sweetener
  • 1⁄2 scoop Quest Vanilla Milkshake Protein Powder
  • 1⁄2 tsp baking powder
  • 1⁄4 tsp baking soda
  • 1⁄4 tsp sea salt
  • 2 tbsp coconut oil, melted
  • 2 tbsp 0% fat greek yogurt (room temperature)
  • 1 egg (room temperature)
  • 2 tbsp egg whites
  • 1⁄4 cup almond milk
  • 1 tsp vanilla extract

Method

  1. Preheat the oven to 350 F and prepare a 6×6 inch pan with non-stick spray and parchment paper.
  2. In a bowl, stir together the almond flour, gluten free flour, sweetener, protein powder, baking powder, baking soda and salt.
  3. In another bowl, whisk together the oil, yogurt, eggs, almond milk and vanilla until smooth.
  4. Add the wet ingredients to the dry and stir until a batter comes together.
  5. Transfer the batter to the pan and bake for 18-22 minutes or when a toothpick is inserted into the center, it comes out clean.
  6. Once the cake has cooled, use a handheld mixer to beat the frosting ingredients together.
  7. Frost the cake and top with chopped candy bite pieces.
  8. Cut into 9 pieces and serve.
