Ingredients

CHOCOLATE CHIP PUMPKIN COOKIES

  • 2 Quest Bake Shop Chocolate Chip Muffins
  • ½ cup almond flour
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • 4 tbsp zero calorie sweetener
  • 2 tbsp melted butter
  • 1 egg, room temperature
  • ¼ cup pumpkin puree

Icing:

Method

  1. Preheat the oven to 350 F. In a mixing bowl, break the muffin into small crumbles using your hands.
  2. Add in the almond flour, pie spice, salt and cinnamon and combine. In another bowl, whisk together the sweetener, butter, egg and pumpkin until smooth.
  3. Add the dry ingredients to the wet and stir until well blended.
  4. Use a 1 ½ tbsp cookie scoop to drop cookies onto a baking sheet lined with parchment paper (makes 12 cookies).
  5. Bake them for 16-18 minutes. Remove and let cool completely.
  6. Mix the icing together and spoon over cookies. Let the icing set and enjoy.
