Maybe that’s why we’re over here at the Quest Blog and not delighting Quest fans with ingenious inventions like delicious blueberry cobbler muffins made from Quest Vanilla Milkshake Protein Powder and a Blueberry Cobbler Hero Bar. They’re moist and yummy, and have 10g of protein with 8g of net carbs and 4g of sugar! Try ‘em.

Ingredients
QUESTIFIED BLUEBERRY COBBLER MUFFINS
Ingredients:
- 1 cup almond flour
- 3 tbsp zero calorie sweetener
- 1 scoop Quest Vanilla Milkshake Protein Powder
- 1 tbsp coconut flour
- 2 tbsp baking powder
- 1⁄8 tsp salt
- 1⁄4 cup vegetable oil
- 2 eggs
- 3⁄4 cup almond milk
- 1 tsp vanilla extract
- 1 cup blueberries
- 1 Quest Blueberry Cobbler Hero Bar, finely chopped
Method
- Preheat the oven to 350 F and prepare a muffin tin with 8 liners.
- In a mixing bowl, stir together the flours, sweetener, protein powder,baking powder and salt.
In another bowl, whisk together the oil, eggs, milk and vanilla. - Add the wet ingredients to the dry and stir just 3 turns, leaving some dry spots.
- Add in the blueberries and continue mixing until incorporated.
Distribute the batter between the liners and bake the muffins for 5 minutes. - Remove the muffins and top with chopped Blueberry Cobbler Hero Bar and then continue baking for an additional 13-15 minutes and cooked through.
- If the topping is darkening too much, cover with tin foil until the muffins have fully baked.
