At the Quest Blog, we’re already hot just thinking about summer, so it was a nice surprise to find out those heroes in the Quest Test Kitchen were working on something called an Icebox Cake. We started cooling down just thinking about a cool treat for summer featuring not one but two chopped up Quest Cookies and Cream Hero Bars. Update: We tried it, it’s great.

Method
- Place the cream cheese and sweetner into a stand alone mixer and beat until smooth.
- Add in the heavy cream and mix until stiff peaks form.
- Fold in the protein powder.
- Line the bottom of an 9×6 inch dish (or similar size) with four graham crackers.
- Spread half of the whipped cream mixture over the graham crackers.
- Sprinkle half of the cookies and cream Hero Bar crumbles.
- Top with four more graham crackers and then spread another layer of the whipped cream mixture over the crumbles.
- Finish with remaining crumbles.
- Cover with plastic wrap and chill for at least two hours before cutting into 18 squares and serving.
