Ingredients
QUESTIFIED IRISH SODA BREAD
- 1 ½ cups almond flour
- 1 scoop Quest Multi-Purpose Protein
- ¼ cup coconut flour
- 1 tbsp zero calorie sweetener
- 3 tbsp ground flax meal
- 1 tsp baking soda
- 1 tsp dried rosemary
- ¼ tsp salt
- 2 eggs
- ¼ cup almond milk
- 2 tsp distilled white vinegar
Method
- Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
- In a large mixing bowl, stir together the almond flour, coconut flour, protein powder, sweetener, ground flax, baking soda and salt.
- In another bowl, whisk together the eggs, milk and vinegar until smooth.
- Add the dry ingredients to the wet and stir using a rubber spatula until a dough comes together.
- Press the dough into a mound and place it on the baking sheet.
- Use a knife to score a “x” into the top of the dough. Bake for 25-28 minutes and golden brown.
