Ingredients
QUESTIFIED BAKED CAULIFLOWER MAC AND CHEESE BALLS
- 12oz bag frozen cauliflower rice
- 2 tbsp heavy cream
- 2oz cream cheese
- 3⁄4 cup cheddar cheese, grated
- 1⁄3 cup jack cheese, grated
- 1⁄2 tsp ground mustard
- Salt and pepper to taste
- 2 eggs, whisked
- 1⁄3 cup coconut flour
- 2 Quest Nacho Cheese Tortilla Chips, crushed
Method
- In a pot over medium heat, add the cauliflower rice, cook until tender, about 5 minutes.
- Add in the heavy cream, cheeses, ground mustard and salt and pepper.
- Stir occasionally until everything is melted.
Line a baking tray with parchment paper. - Use a 1 1⁄2 inch cookie scoop to make 12 evenly sized balls and place them on the tray.
- Freeze for 20 minutes.
- Preheat the oven to 375 F.
- Place the whisked eggs into a bowl, the coconut flour into another and the crushed Tortilla Chips into a third bowl.
- Remove the cauliflower cheese balls from the freezer and coat each one in coconut flour.
- Once they are all coated, dip each one into the eggs until completely covered and then finally the tortilla chips until well coated.
- Return them to the baking sheet.
- Bake the cauliflower mac ‘n cheese balls for 12-14 minutes and golden brown.
- Serve immediately.
