Chocolate Covered Apple Slices using Quest Peanut Butter Cups

It’s the time of year when it’s natural to feel sentimental. Even the Quest blog gets misty eyed at the thought of the leaves changing color, the days getting shorter, and eating a lot of apples. For some reason there are just more apples around. You know we’re right. And since you have a ton of apples on your hands, try this deliciously simple apple recipe using the Quest Peanut Butter Cups.

Ingredients

CHOCOLATE COVERED APPLE SLICES

  • 2 medium granny smith apples
  • 6oz (about ¾ cup) sugar free chocolate chips
  • 1 tsp coconut oil
  • 1 package Quest Peanut Butter Cups

Method

  1. Wash and dry apples. Slice apples thinly, about ¼” in thickness and remove seeds.
  2. Cut the skin from the bottoms and insert a lollipop stick into the center or omit if you don’t have lollipop sticks.
  3. In a microwave safe bowl, melt the chocolate and coconut oil together until smooth.
  4. Use a spoon to cover one side of each slice in chocolate, scrape off excess chocolate and place the chocolate covered apples on a baking dish lined with parchment paper.
  5. Chop the peanut butter cups into small pieces and sprinkle over chocolate. Chill until chocolate is solid and serve.
