Ingredients

SNICKERDOODLE PUMPKIN LOAF

  • 7oz pumpkin puree (about 1 cup)
  • 1 Quest Snickerdoodle Cookie
  • 4 eggs, room temperature
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • ½ cup zero calorie sweetener
  • 1 ½ cups almond flour
  • 1 scoop Quest Vanilla Milkshake Protein Powder
  • ¼ cup flax meal
  • 2 tbsp coconut flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt

Method

  1. Preheat the oven to 350 F and prepare a loaf pan with parchment paper and non-stick spray.
  2. In a mixing bowl, use a handheld mixer to beat the pumpkin, eggs, butter, vanilla, and sweetener until creamy, about 1 minute.
  3. In another bowl, stir together the almond flour, protein powder, flax meal, coconut flour, baking powder, spices, and salt.
  4. Add the dry ingredients to the wet and stir until no dry spots remain.
  5. Transfer the mixture to the prepared pan.
  6. Break the cookie into small crumbles and sprinkle over the top of the batter.
  7. Bake for 15 minutes.
  8. Remove and cover with tin foil and then return to the oven for an additional 30-35 minutes and cook through.
  9. Cut into 12 slices and serve.
