Ingredients
FROSTED BIRTHDAY CAKE PANCAKES
- 1 ⅓ cup almond flour (Bobs red mill)
- 2 tbsp coconut flour (Bob’s Red Mill)
- 1 tsp baking powder
- ¼ tsp salt
- 1 tbsp zero calorie sweetener
- 1 scoop Quest Vanilla Milkshake Protein Powder
- 2 large eggs
- 1 cup almond milk
- 1 tsp vanilla extract
- 1 Quest Frosted Cookie, chopped and separated
- 1 tbsp sprinkles
Method
- In a mixing bowl, stir together the almond flour, coconut flour, baking powder, salt sweetener and protein powder.
- In another bowl, whisk together the eggs, milk and vanilla extract.
- Add the wet ingredients to the dry and stir until no dry spots remain.
- Fold in the cookie pieces, reserving 2 tablespoons.
- Prepare a griddle or frying pan with non-stick spray and turn on medium-low heat.
- Cook pancakes ¼ cup at a time for 2-3 minutes on each side and golden brown.
- Serve with remaining cookie crumbles.
