Ingredients
BIRTHDAY CAKE MINI CHEESECAKES
Crust:
- ½ cup almond flour (Bobs red mill)
- 1 tbsp zero calorie sweetener
- 2 tbsp butter, melted
Cheesecake:
Method
- Place the almond flour and sweetener into bowl
- Add in the melted butter and stir until a dough forms
- Press the dough into the bottom of 6 cupcake liners and bake at 350 F for 10 minutes
- Chop the Quest Cookie into small pieces
- Blend together the cheesecake ingredients and then stir in the frosted cookie pieces and sprinkles
- Top crusts with cheesecake filling
- Bake for 15-20 minutes and baked through let cool and top with cool whip if desired
