Method

  1. Preheat the oven to 350ºF and prepare a 6-inch round pan (at least 4” deep) with non-stick spray.
  2. In a mixing bowl, stir together the flour, sweetener, protein powder, baking powder and salt.
  3. In another bowl, whisk together the eggs, melted butter and almond milk.
  4. Add the wet ingredients to the dry and stir until no spots remain.
  5. Fold in ¼ of the chopped hero bar.
  6. In the bottom of the prepared pan, arrange the pineapple slices and blueberries.
  7. Top with cake batter and bake for 40-45 minutes and a toothpick comes out clean.
  8. Let the cake cool completely before flipping out onto a serving plate and topping with remaining crumbles.
