Method
- Preheat the oven to 350ºF and prepare a 6-inch round pan (at least 4” deep) with non-stick spray.
- In a mixing bowl, stir together the flour, sweetener, protein powder, baking powder and salt.
- In another bowl, whisk together the eggs, melted butter and almond milk.
- Add the wet ingredients to the dry and stir until no spots remain.
- Fold in ¼ of the chopped hero bar.
- In the bottom of the prepared pan, arrange the pineapple slices and blueberries.
- Top with cake batter and bake for 40-45 minutes and a toothpick comes out clean.
- Let the cake cool completely before flipping out onto a serving plate and topping with remaining crumbles.
