Ingredients

ARUGULA ARTICHOKE PIZZA WITH GOAT CHEESE

  • 1 Quest 4-Cheese Pizza
  • 1/2 cup marinated artichokes, drained and roughly chopped
  • 2 oz crumbled goat cheese
  • 1/2 cup cherry tomatoes, halved (about 7 tomatoes)
  • Crushed red pepper
  • 1 cup arugula (tossed in 1 tbsp lemon juice)

Method

  1. Preheat the oven to 400F.
  2. Place the pizza in the center of a baking sheet.
  3. Top the pizza with artichokes, crumbled goat cheese and cherry tomatoes.
  4. Sprinkle with crushed red pepper and bake for 20-25 minutes and golden brown.
  5. Top with tossed arugula before cutting into slices and serving.
