Ingredients
WHITE CHOCOLATE PISTACHIO TRUFFLES
- 2 Quest White Chocolate Raspberry Bars
- 1 Scoop Quest Vanilla Protein Powder
- 2 tbsp pistachios, shells removed
- 2.5oz Greek yogurt cream cheese, room temp
- 1/2 cup sugar free white chocolate chips
- 1 tsp coconut oil
- 1 tbsp crushed pistachios for topping
Method
- Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
- Chop the Quest bars into small pieces and place them on the baking sheet.
- Bake for 5 minutes and golden brown. Let the pieces cool completely.
- Place the Quest bar pieces, protein powder, pistachios and 1 tbsp of the white chocolate chips into a food processor or blender and blend until well combined.
- Add in the cream cheese and pulse until wet crumbles form and stick together.
- Separate the mixture into 12 evenly sized balls and place them on a pan lined with parchment paper.
- Chill while you melt and prepare your white chocolate.
- Melt the white chocolate chips and coconut oil together until smooth in 15 second increments in the microwave, stirring between each.
- Dip each truffle into the chocolate until completely covered using a fork.
- Let the excess chocolate drip off and then return the truffle back to the baking sheet.
- Top with crushed pistachios and chill until chocolate is solid.
